Ok, everybody’s been asking for an RRR of their favorite cookie. Apparently, you all like the same one! (Yes, they are the ones that reputedly look like boobs). Enjoy this reduced fat, gluten free, no sugar added treat with all the chewy sweetness of the cookie you grew up loving, oh and it’s topped with a kiss, a dark chocolate update, but no I couldn’t bring myself to replace that with anything else. Enjoy!
1 egg white
1 15oz. can white cannellini beans, drained and rinsed
2 tbsp vanilla
½ cup honey
1 ½ cups natural peanut butter
½ cup stevia granular, divided in 2
1 cup Bob’s Gluten Free All Purpose Baking Flour
1 tsp baking powder
1 9oz bag Hershey’s Special Dark Chocolate Kisses, unwrapped
Preheat oven to 350 degrees. Lightly mist cookie sheet with olive oil. In blender or food processor, combine eggs, ½ the stevia, vanilla and beans until smooth. Pour into mixing bowl and add peanut butter, honey and mix until smooth. Add baking powder and flour and mix. Scoop out spoonfuls of dough, roll into balls and roll each ball to coat in the remaining stevia. Place balls onto a cookie sheet. Bake on the oven’s middle rack for 10 minutes or until very lightly browned. Immediately, press an unwrapped Kiss on top of each cookie. Let the cookies cool on the cookie sheets for 5 to 10 minutes before removing. (Yields about 4 dozen cookies of 3 ½ inch diameter).
