½ lb 93% lean grass fed ground beef or organic free range chicken breast (chopped)
Low-sodium taco seasoning
8oz fat-free refried beans
4 Mission Low Carb Tortillas
Salsa or pico de gallo
Broccoli slaw, chopped spinach, and/or Mexican Cole Slaw http://www.fitnessandfuel-la.com/archives/1047
1 avocado (chopped)
¼ cup low-fat cheddar cheese
Fat free Greek yogurt
DIRECTIONS: Add beef or chicken to a large skillet and cook over medium heat, turning continuously for even cooking. (Break beef into crumbles). In a small saucepan warm the refried beans on low heat. When the meat is ready, add taco seasoning. Place meat in the tortillas first. Add fat free refried beans, salsa, broccoli slaw, spinach and/or Mexican Cole Slaw, avocado, and a sprinkle (about 1tsp) cheese. Top w/ fat free Greek yogurt.* Serves two.
*Vegans should use vegan taco shells or tortillas, refried-beans, cheese and avoid the meat and Greek yogurt. Mix the taco seasoning into your refried beans instead of mixing into the meat. As a meat eater I can say these tacos are muy delicioso sans carne!
VARIATION: Make a taco salad by eliminating the tortillas and throwing the lot in a bowl atop a bed of spinach. Even healthier than the tacos.
