Proof that your cookies, cakes and their frosting can be delicious and nutritious! Try this sugar free high protein icing next time you decorate cookies! A real calorie saver for diet-derailing holiday baking on Halloween, Valentines Day & Christmas.

1 1/2 cup vanilla Met-Rx protein powder
1/2 tsp pure stevia extract
1/3 cup coconut oil, melted
1/4 cup full fat coconut milk
Juice from 1 ripe lemon
1 tsp vanilla extract



Sift protein powder and stevia into the bowl of a stand mixer fitted with the whisk attachment. Add coconut oil, coconut milk, lemon juice & vanilla. Fold in with a rubber spatula to gently start mixing (and eliminate powder explosion). Beat on low for a minute to combine, then whip on high for 2 minutes to get some air. If too thick, add water by the teaspoon and continue mixing. Separate icing into several bowls before adding food coloring of choice.

1. Use lemon zest, if you prefer stronger lemon flavor.
2. To ice chocolate cake or cookies, replace volume of lemon juice with coconut milk.
3. To make chocolate icing: Replace 1/4 of protein powder with unsweetened cocoa powder. Add 1/4 tsp more stevia. Replace volume of lemon juice with coconut milk.
