Who doesn’t love pancakes?! You know that syrup-soaked sugar bomb breakfast ain’t good for you, but it’s impossible to turn it down. Now your favorite gets a healthy and haute makeover. Drastically reduce calories, fat and sugar. Enjoy filling fiber and protein in this legitimately PRETTY plate. Eat your heart out. Live to NOT regret it!

 

INGREDIENTS
2/3 cup gluten free flour (Try Trader Joe’s new one!)
1 scoop Met Rx Protein Plus Vanilla
1/4 cup unsweetened reduced-fat shredded coconut
1 tsp baking soda
1 tsp baking powder
1 scoop Trader Joe’s Pure Stevia (about 1/8 of a tsp)
1 tsp cinnamon
2 eggs
2 egg whites
1/4 cup coconut milk
1/3 cup water
1 tsp coconut oil
Blueberry Ginger Syrup (recipe below)
1 banana (sliced)
1 tbsp slivered almonds

DIRECTIONS
In large bowl combine gluten free flour, protein powder, coconut, baking soda, baking powder, stevia and cinnamon. In small bowl whip eggs and egg whites with a fork. Mix in coconut milk and water. Pour egg mixture over dry ingredients and mix well.

Warm 1 tsp coconut oil in large pan over medium heat. Rotate pan or use spatula to evenly distribute oil across pan’s surface. Drop batter by 1/4 cupful. Flip each pancake when bubbles appear on top. (About 1 1/2 minutes per side). Arrange pancakes on plate and top with Blueberry Ginger Syrup, banana slices and slivered almonds. You may optionally toss some slivered almonds & flaxseeds on top for added protein, fiber and crunch. Serves 4.

BLUEBERRY GINGER SYRUP

INGREDIENTS
1.5 cup blueberries (fresh or thawed frozen berries)
Juice fresh one fresh lemon
1-2 tsp ginger (fresh grated or jarred)
1 scoop Trader Joe’s Pure Stevia (about 1/8 of a tsp)
Zest from lemon

DIRECTIONS
Zest lemon with grater and set aside. Microwave blueberries and 1-2tsp ginger (depending on how much you love it) in a microwave safe dish on high for 60-90 seconds. Puree thoroughly with hand blender or, for more rustic texture, mash berries with potato masher or mojito muddler keeping as much texture as desired. Stir in stevia and lemon zest.
