Winter is here and salads are not always what we feel like eating during the colder months. However, we still need to eat vegetables, so let’s braise some. This braised fennel recipe is quick, easy and really yummy. 1 cup of fennel contains 17.4% of your daily vitamin C needs, as well as fiber, potassium, manganese, iron, B3, calcium and magnesium. So 2 cups of this braised fennel and you’re getting a wide variety of your nutritional needs covered while feeling warm and satisfied.

INGREDIENTS
*As always, please use organic ingredients for YOUR health!
4 fennel bulbs, trimmed & quartered
1 orange, juiced & zested
1 clove garlic
2 tsp olive oil
1 cup low sodium chicken stock


DIRECTIONS
Preheat an oven to 225 degrees. In the meantime, heat the olive oil over a medium heat in Dutch oven till lightly smoking. Place fennel into the Dutch oven and lightly brown both sides of the fennel. In a bowl, combine the garlic, orange juice, zest and chicken broth together. Add the mixture to the fennel and stir thoroughly. Place the lid on the Dutch oven and place into the preheated oven. Cook for 2 hours or until the fennel is tender and the sauce has reduced substantially.
