Rich velvety homemade tomato-y Marinara sauce…in less than 25 minutes? 90% less sodium? HIT ME!

Ingredients

  • As always, please choose organic, for YOUR health!
  • 1 large red onion
  • 3-4 cloves garlic, chopped
  • 2 lb freshly diced tomatoes OR two 15 oz cans no salt added diced tomatoes
  • 6 oz can tomato paste
  • 1/4 cup fresh basil leaves
  • 1 Tbsp fresh ground black pepper

Instructions

  1. In a large sauté pan, slowly heat olive oil on a medium heat, add the diced red onion, crushed garlic and a pinch of sea salt. Cook the onions till tender and translucent, do not drain them. Add the diced tomatoes and tomato paste and stir. Lower heat and simmer for 20 min. Add basil, as well as salt and pepper to taste. Use a hand blender to slightly purée the sauce.
  2. Serve with a bowl of steamed broccoli or zucchini noodles (bought Spaghettables for our clans too), grilled chicken breast or our Grassfed Beef or Turkey Meatballs and 1/2 cup of quinoa or brown rice pasta. We love Ancient Harvest Quinoa Pasta – taste and texture are so similar to traditional pasta, you won’t miss the gluten!
