Perfect Chicken Breasts on the Grill
This grilled chicken recipe is so easy, everyone should be making this part of their weekly meal prep. The macros are awesome, the chicken is moist, spicy, sweet + the char from the grill gives a great umami/bitterness as well.
This recipe is super easy + the key to it all is the 0% Fage Greek yogurt along with the simple spice blend.
Yogurt changes chicken breast in a few really important ways: it helps keep it more tender + it improves the way the outside cooks.
Because yogurt is mildly acidic + naturally contains calcium, it gently breaks down some of the surface proteins without being too harsh. That matters because stronger acids can make chicken turn tight, dry + stringy. Yogurt is much gentler, so the chicken stays more tender once cooked.
It also creates a light coating on the outside of the chicken, which helps with a few things:
slows moisture loss a bit while it cooks
helps create better browning + caramelized spots, especially when grilling, roasting, or broiling
gives the surface a little protection, so the outside does not cook too fast before the inside is done
Add in the amazing middle eastern spice mix + some stevia to give the prefect flavor combination to this dish.
We make several pounds of this every Sunday for the upcoming week, once it’s cooled, we then chop them up and have them in glass containers in the fridge. Super easy to just reheat in the microwave on like 60% power, so you ALWAYS have low calorie protein to throw into salads/bowls during the busy work week when cooking time is limited.

Spiced Grilled Chicken Breasts
We absolutely love these spiced grilled chicken breasts. They draw from the aromatic flavors of the Middle East + India. The yogurt in the marinade adds additional protein + also helps tenderize the chicken, while keeping it moist.
Ingredients
- *As always, please choose organic for YOUR health!
- 6lbs Chicken Breasts
- 1 1/2 cup 0% Greek Yogurt (FAGE is the best!)
- 3 tbsp Garam Masala
- 2 tbsp Curry Powder
- 1 tbsp Cayenne Pepper
- 1 tbsp Garlic Powder
- 1 tbsp Black Pepper
- 2 tsp Pure Stevia
Instructions
- Add yogurt + spices to a large mixing bowl, combine well to make a smooth marinade with a paste like texture.
- Butterfly the chicken breasts (when they're too thick, its hard to get them cooked all the way through without the outside getting dry.
- Add the chicken + allow to marinade for several hours or even overnight.
- Preheat your grill on HIGH! you want it super hot. spray the grill with coconut or olive oil spray to prevent sticking. Grill the chicken on one side for between 3-5 minutes depending on thickness. Flip and cook on other side for 1 minute less than the first side.
- Take off grill, allow to rest before cutting. ENJOY!!!
