Ambrosia Salad INGREDIENTS:4 cups of your favorite fresh fruit sliced into bite-sized pieces – tangerines, grapefruit, pears, peaches, pineapple, grapes, cherries½ cup unsweetened low-fat flaked coconut¼ cup pomegranate seeds1 cup low-fat greek yogurt2-4 tbsp powdered steviaDIRECTIONS: Place sliced fruit, coconut, pomegranate seeds and greek yogurt in a large bowl. Whip all together, add powdered stevia to thicken. Refrigerate until chilled, overnight if possible.
