Fat-Free Ranch Dressing / Dipping Sauce

America's favorite dressing just got a lot lighter. This easy low sodium fat free revamp takes just a minute with a food processor or hand whisk. Serve alongside a veggie platter, Fried Chicken Nuggets (http://www.fitnessandfuel-la.com/?p=346) or on any salad as dressing. Try 1tbsp with 1 tbsp salsa for a Southwestern Salad!INGREDIENTS:1 clove fresh garlic (minced) or ½ tsp minced garlic in a jar¼ red onion (finely chopped)2 tbsp fresh parsley (minced)½ cup fat-free buttermilk2 tsp cider vinegarPinch of salt (optional)1 tsp ground black pepper½ cup 0% Greek yogurtDIRECTIONS: Process garlic, onion and parsley in food processor. Add buttermilk, vinegar, salt and pepper and process again. Stir in greek yogurt by hand. If you do not have a food processor, no worries! First, be sure to mince garlic, onions, and parsley as finely as possible. Then simply whisk all ingredients together by hand in a large bowl to avoid splash. Refrigerate at least 1 hour to allow for spices to comingle and firm up if serving as a dip. Add additional buttermilk to thin if preferred when serving as a salad dressing.
