Low Fat Mexican Layer Dip
Using fat-free refried beans, fat free Greek yogurt and just a sprinkle of low-fat Cheddar Cheese you can cut about 90% of the fat from this party appetizer favorite. Serve with the veggie platter, I promise even celery and broccoli taste great dipped in this edible fiesta, and/or if your crowd demands chips, try a gluten free winner like the Guiltless Gourmet Blue Corn Organic Baked Tortilla Chips.INGREDIENTS:1 (1 ounce) package low sodium taco seasoning mix116oz can fat-free refried beans2 cups 0% Greek yogurt116oz jar salsa1 large tomato, chopped1 green bell pepper, chopped1 red bell pepper, chopped1 bunch chopped green onions9oz spinach, chopped1/2 cup low-fat shredded Cheddar cheese6oz can sliced black olives, drained1 avocado, diced (optional)DIRECTIONS: In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large transparent serving platter (so you can see the layers – it’s pretty!) Spread Greek yogurt over the refried beans. Top with a layer of salsa. Place a layer of tomato, green bell pepper, green onions and spinach over the salsa, and top with Cheddar cheese. Garnish with black olives and optional avocado. Ole!
