Seared Albacore Tacos

Here is our take on fish tacos, we've gone Latin-Asian Fusion on them, adding in a thai slaw, Asian inspired spicy sauce and oriental marinated albacore tuna. They are really quick and easy to make and they taste incredible. Try them at home and make Taco Tuesday a healthy night in rather than a disastrous night out.INGREDIENTS:For the Albacore Marinade-2 tablespoons of chopped cilantro2 tablespoons of lime juice1 teaspoon olive oil1 teaspoon coriander seed1/2 teaspoon salt1/2 teaspoon pepperFor the Thai Slaw-click linkFor the Pico-2 ripe tomatoes1/4 cup diced red onions2 tablespoons chopped cilantro1 tablespoon chopped jalapeno pepper1/4 teaspoon salt1/4 teaspoon pepperFor the Sauce-1 tablespoon Sriracha Sauce1 teaspoon fish sauce1 teaspoon sesame oil1 teaspoon crushed garlic1 tablespoon finely chopped gingerStevia (2x40mg scoops)3 tablespoons lime JuiceTortillas:MiRanco Organic Taco SlidersGuacamole:Trader Joe's Avocado's Number One GuacamoleDIRECTIONS:For the Albacore:Mix all the ingredients together and allow albacore to marinade for 20 minutes. Then sear Albacore in a hot non stick skillet. Cook for about 90 seconds on each side, allowing the center to remain raw with a nice sear on the outside.For the Pico:Finely dice the tomatoes, onions and jalapeno peppers. Put in a bowl and add lime juice, salt and pepper. Finally, add the cilantro and allow to sit.For the Sauce:Place all ingredients except the stevia into a small saucepan and bring to a simmer. Allow it to reduce till sauce begins to thicken. Right before serving, add the stevia for sweetness.To assemble the Tacos:Warm the tortillas in a non stick pan. Use a teaspoon of Trader Joes’ Avocado’s Number One Guacamole and spread onto each tortilla. Top with the Thai slaw and a few pieces of albacore. Top with some of the sauce and some Pico. Enjoy!
