INGREDIENTS4 cups baby spinach12 oz raw Brussels sprouts1/2 cup fresh blueberries2 roasted beets2 cups garbanzo beans2 Tbsp slivered almonds1/4 cup roasted unsalted edamame beans1/2 oz goat milk blue cheese * (We also love Pastures of Eden Sheep Milk Feta)DRESSING **1/4 cup toasted sesame oil1/2 cup rice wine vinegarJuice from 2 fresh limes2 inch piece of ginger3 cloves garlic1 Tbsp freshly ground pepper1/3 tsp steviaPinch cayenne pepperDIRECTIONSRoughly chop greens throw in large salad bowl. Chop Brussels sprouts in half the finely dice + add to bowl. Ditto on the beets. Add blueberries + remaining salad ingredients to bowl. Toss + temporarily set aside.To make dressing, peel ginger + garlic + dice. Place ingredients into hand blender cup + blitz until frothy.Great news for those of us that are lactose-intolerant + really missing , both sheep + goat milk are lower in lactose than cow milk. Like me, you may find that a lil pinch of this goat milk cheese accompanied by this much fibrous vegetables does not cause the digestive issues you’ve experienced with other cheeses. And trust me, a lil smidge of this ultra-funky stuff crumbled up goes a long, long way! The salty funk notes contrast so well with the sweet berries + nutty bits + toasted sesame oil + gently spicy ginger, I’ll even go as to say we’ve achieved umami...I know...Blue cheese + Asian flavors!? Ginger, sesame...Whitney! WTF is wrong with you?Yup. It conflicts with everything we’ve ever learned about cooking + flavor combinations. It’s so completely f’d up, BUT IT WORKS + OMG! It’s addictively delicious!Open your mind + live on the culinary edge for 10 minutes. Honestly, it’ll take less time to prepare + less than that to scarf down. When you’re sitting there staring at your empty bowl, happy full belly, serotonin surging, feel free to thank me.*Vegans can skip cheese or use vegan cheese of their choosing.**Use 2-3 Tbsp dressing / serving, but make this larger volume. You’re gonna wanna enjoy it on everything!
