INGREDIENTS:

1 (1 ounce) package low sodium taco seasoning mix
116oz can fat-free refried beans
2 cups 0% Greek yogurt
116oz jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 bunch chopped green onions
9oz spinach, chopped
1/2 cup low-fat shredded Cheddar cheese
6oz can sliced black olives, drained
1 avocado, diced (optional)

DIRECTIONS:  In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large transparent serving platter (so you can see the layers – it’s pretty!) Spread Greek yogurt over the refried beans. Top with a layer of salsa. Place a layer of tomato, green bell pepper, green onions and spinach over the salsa, and top with Cheddar cheese. Garnish with black olives and optional avocado. Ole!
