Mexican Cole SlawConsistent with a lot of southern cooking, Cole slaw (yes, assumed association with this fatty side has always offended me), ain’t made with your health in mind.  Slaw is typically made full fat mayo and/or sour cream, heavy salt, and the whitest of white cabbage, and thus has little food value even though it’s typically listed on menus as a “vegetable.”  However, we can change all that!  Substitute fat free Greek yogurt for the mayo and eliminate 12-15 grams of fat per serving.  Reduce salt to just a ½ tsp of sea salt to avoid consuming 20-30% or more of our daily recommended sodium in one serving.  Not to worry, plenty of flavor will be delivered by the fresh lime juice, Tabasco and cilantro. Lastly, amp up the nutritional value trading pale for passion.  You already know the darker the fruit or vegetable the more nutrient and anti-oxidant-rich it is. Broccoli slaw and red cabbage deliver those DRVs. Each serving of our Mexican Cole Slaw provides 50% Vitamin A, 100% Vitamin C and 6 grams of fiber, in addition to Thiamin, Riboflavin, Folate, Calcium, Iron and Magnesium, Vitamin K, Vitamin B6, Potassium and Manganese.

Enjoy as a healthy side dish, on top of a spinach salad with protein or in your favorite tacos.  Eat as much as you please, our version is as nutritious as it is delicious!  Makes 2 large servings, so please double, triple, etc to share with a group.

INGREDIENTS:
2 cups broccoli or rainbow slaw
3 cups shredded red cabbage
3 green onions, thinly sliced
1/2 cup cilantro, chopped
3 tbsp fat free Greek yogurt
3 tsp fresh lime juice (or juice from 3 juicy limes)
1/2 tsp Tabasco sauce (Sriracha sauces works too)
1/2 tsp ground sea salt

DIRECTIONS:  In large bowl, mix broccoli slaw, red cabbage, green onions and cilantro. In little bowl, wisk together Greek yogurt, lime juice, hot sauce and sea salt. Pour mixture over veggies. Use a large wooden spoon or two to distribute mixture throughout. Season to taste with additional lime or hot sauce. Cover and chill in the fridge for a few hours to allow flavors to mingle and veggies to soften to the desired texture of Cole Slaw.
