1/4 cup cocoa powder
1/4 cup coconut oil
Trader Joe’s Liquid Pure Stevia, to taste
Frozen organic cherries
Place plate or storage container in freezer. Gently warm coconut oil over low-medium heat on stovetop or in microwave. Add cocoa powder and sweetener to taste. I use about 1/3 teaspoon as we like our chocolate very dark, and bitterness amplifies the sweetness of the cherries. Choose to drizzle chocolate over cherries or to use a toothpick or icepick to dip cherries halfway in chocolate – either way the chocolate will harden instantly when it comes in contact with the frozen fruits. Enjoy immediately, or stow away for future guilt-free indulgence in the chilled storage container in the freezer. Note: once refrozen, allow to soften slightly at room temperature for 5 minutes before enjoying. To serve, you have the option of dusting cherry truffles with a gentle tap of sifted cocoa powder.
