Our new favorite salad this winter! Finely shredded dinosaur kale + radicchio, ripe pears, golden raisins, celery + crushed almonds create an amazing array of textures + flavors. The tang + funkiness of the lemon miso dressing really complements the sweet fruit, bitter greens + crunchy almonds.

 

 

 

 

INGREDIENTS (SALAD)

1.5 bunch Dinosaur Kale

1 head Radicchio

4 stalks Celery

1/4 cup Golden Raisins

2 tbsp Slivered Almonds

1 Pear

 

INGREDIENTS (VINAIGRETTE)

Zest from 1 Lemon

1/2 cup Lemon Juice

2 tbsp Olive Oil

1 tsp White Miso

1/4 tsp Black Pepper

1/8 tsp Pure Stevia

DIRECTIONS

Finely slice kale, radicchio + celery. Place into a large salad bowl. Mince the golden raisins (so the sweetness goes further + we use less sugar dried fruit). Chop pear into bite sized cubes. Toast your almonds. Add pear, raisins + almonds to the greens.

To make the dressing, place all ingredients into a container/bowl with high sides + blend using an immersion blender till the oil + lemon juice have completely emulsified. Add to the salad + ENJOY!!!
